Assalam ualykum,

Anyone like enchiladas? anyone have recepies for enchiladas? i have one if someone wants it i can write it up. Does anyone have vegetable enchilada recepies? That's what I am looking for.

 My hubby taught me how to make enchiladas from his country....I too be glad to give anyone the recipe......

salamu aliakom,

well i remember a while back going to some friends of ours and the brothers wife masha Allah was latino so she made some enchilatas that were to die for. I mean, forget Taco Bell and those fake mexican stores, this stuff was the real deal.

Assalam ualykum,

Here is the recipe for the enchiladas that I promised.

2 cups green Mexican sauce (make sure it says medium on the bottle when you buy it)
1 cup sour cream
1 teaspoon garlic powder
1 tablespoon freshly chopped lentils (the ends only)
3 boneless chicken breasts
2 table spoons vegetable oil
Tortillas (small size)
1 cup milk
Cheese


Boil the chicken breasts. Chop them up into small pieces. Fry the lentils in the already heated 2 tablespoons oil for about 1-2 minutes only. Put in the 1 teaspoon garlic powder.

Mix the sour cream and 1 and a half-cup of green Mexican sauce. Heat it for about 5 minutes, and also put in the lentils and the garlic mixture in there now.

Mix the chicken in the sour cream and sauce mixture, BUT leave most of the mixture for later on though. Now, roll up the chopped chicken into the tortillas. (Don't make it a chicken samosa like someone I know wanted to do!)Mix in some cheese, but not too much since you might want to sprinkle some later on the rolls.

Pour the milk in the remaider of the mixture and stir well. Get a pan and spread the mixture very thinly on the bottom of the pan. Put the tortillas in the pan and then spread the sauce mixture thinly over them. Also "dot" the enchiladas with the remainder of the green Mexican sauce. Sprinkle cheese as desired.

Geen Mexican sauce is guacamole, right?  That's the only green sauce I know in Spain/Mexico except for a green chile paste.

I have no idea Arshad. The bottle that I buy, it says on there, "Green Mexican Sauce." That's all.

If you have a Mexican store nearby, you should find a section for enchilada sauce and it comes in green and also red.
I've even seen it in our supermarket. But it's not guacamole! That may taste kind of strange.
