[RECIPE] Mamoul recipe?  ANYONE?

Asalaam alaikum wrt wb,

Anyone know how to make Mamoul cookies?  Specifically ones with pistachios inside.  I remember a looooooooonnnng time ago going to a bakery called Omer's Bakery and having a mamoul cookie there that was soft on the outside and had pistachio inside.  It was really good, but I can't find those cookies anywhere.  The ones I have tried have a hard cookie on the outside or some of them have dates inside.  

Does anyone know how to make these?

There are a lot of mamoul recipes,from different parts of the arab world.
I will give you my aunt's recipe(i love it):

5 cups semolina+1tsp B.P.
2 cups ghee(hot)
1/8 cup flowerwater(similar to rosewater,but with a different aroma)
For filling:
pistachio+sugar+flowerwater.
*Add the hot ghee to the semolina.
*Add the flower water and enough tap water to make a semi-soft dough(if it is too soft add a little flour)
*Make into small balls and fill each with pistachio,then put in the special mold(to get the nice pattern,then put in the pan.
*When finished put the pan in a medium heated oven,and stay close by until it is nice and golden
*Remove and sprinkle with icing sugar.

Not to underestimate your culinary skills brother Arshad, but ma'moul is hard work.  Requires one day's preparation and half a day of making.  Plus there are few hundred recipes of it, the ratio of samolina : regular flour, the amount of butter to add seem to vary and give different results, some of them disappointing.  Our ma'moul is not exactly reproducible from eid to eid, but it sure is yummy :-)

If there are arabic food stores in your area, go and look/ask for the ready made Saudi Ma'moul. Very good.

Cool, someone actually responded to this thread.  The recipe given doesn't look too hard?  (I think.)   What does B.P. mean?   And at what temperature do I cook it at, and for about how long?  But it sounds like the cookie is hard?

I've tried the Saudi date Mamouls and used to have those during Ramadhan.  Those were great, it had a nice and soft cookie, but they didn't have a pistachio filling. :(

B.P is baking powder.  Bake in a 340 F oven for about 20-25 minutes or until the ma'moul is golden on top.  Good luck with it, let us know how it went, eh?

It doesn't seem that difficult, flour, water, sugar, and pistachios basically.  Recipes are just like chemistry recipes, right?  One measures out the amounts (just like chemicals) and cooks it (bunsen burner).  :)  

Se7en just cause you tried making this and failed, doesn't mean others can't do it. :)

Bhaloo, please don't disgrace chemistry by comparing it to cooking!!!  Chemistry is much more sophisticated and complicated than that.  Perhaps you've never taken an organic chemistry course :)

And for any sisters out there (ahem, se7en) who think only they can cook: most of the best chefs in the world are ... gasp ... men!!!

Now whether or not Bhaloo is one of them is another story!

Yeah that's true about chefs being men. But remember, they have to go to school and learn how to cook :-) On the other hand cooking is second nature to most, but certainly not to all, women.

Maybe the brothers should share their receipes with us if they are so proud of their cooking. Right se7en? ;)

Alhumdullilah I never took any organic chem courses, normal chemistry was enough for me, lol. :)  Good point about the best chefs being men.  I think men have the potential to be really good cooks, its just that they don't attempt it usually.

Those of you that are involved in MSA organizations and have foods prepared by the brothers will know what fine dining is and will be happy to relate for us some of those experiences.  As for the brothers giving out recipes, some brothers on here might want to guard some of their secret recipes for fear of others learning about their secret cooking styles.  I would suggest that those brothers mention some of the easier recipes to appease the critics on here, such as omellets, simple pastas, uncle Ben's minute rice, and Bisquick pancakes.  I'd also like to note that men are good at BBQing foods. :)

Come on se7en,it is not such a big deal,making mamoul and cookies is something you can experiment with until you get something real good,sometimes the results of experimenting are even better than the original recipe!!!
