Baklava Receipi

Here it is- my secret receipi! If any one of you get rich off of it- send my portion to charity!

Kathy's Baklava

syrup-
2 cups sugar
11/2 cups water
1 Tablespoon lemon juice
2 inch square orange rind
2 inch square lemon rind
1 stick of cinnamon

Bring sugar, water, juice and stick to boil- stirring occasionally.
Add rinds.
Cook over medium heat for 10 minutes.
Cool.
     
Nut Filling-
3 cups crushed walnuts toasted with a little butter
2 cups crushed almonds toasted with a little butter
1/2 cup brown sugar
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon cloves
3 Tablespoons melted butter

Mix all the above ingredients together- best if done the night before, for the flavors to mingle.



1pkg filo dough- defrosted
1 pound melted butter- some like clarified- I use it all!
water in a misting bottle

Butter a 13 x 9 pan.
Layer 8 sheets of filo dough, one at a time, brushing butter over each individual sheet of filo.
Take 4 more sheets. Drape each sheet halfway over each side of the pan.- butter each sheet.
Take 2 cups of the nut mixture and spread on top.
Fold over the sheets on top of the nuts. Buttering again.
Layer 4 sheets- buttering each one.
Take 4 more sheets. Drape each sheet halfway over each side of the pan.- butter each sheet.
Pour in the rest of the nut mixture.
Fold over the sheets on top of the nuts. Buttering again.
Layer the rest of the filo sheets-  buttering each layer.
With a spatula push down the edges, of the finished baklava, on the sides.            
Cut the top of the baklava filo with a knife down to the nut layer, in the size you wish to serve.
Pour the rest of the butter evenly over the whole dessert.
Mist the dessert very lightly with water.

Bake in a preheated 350 degree oven for 30 minutes. Turn oven to 400 degrees and bake for 20 minutes- watch closely- do not let it burn.

When done remove from oven. If the first filo sheet does not look good- throw it away.

Cool for 5 minutes.

Remove orange, lemon, and cinnamon stick from syrup-
Spoon evenly over baklava.
Cool three hours or overnight.
