assalaamu alaikum After a successful venture into the world of pasta dishes on the weekend, i want to hone my culinary expertise by making a particular soup i tasted many years ago. Its the chicken and (sweet)corn soup - can anyone here make it? Its a misty cream colour with (surprise surprise) shredded chicken and sweetcorn in it. I think there was some salad type stuff too. ... and a bit of pepper, some spices... and voila! I can just taste it.. quite delectable to the taste buds! Kashif Wa Salaam |

[slm] That sounds an awful lot like the soup my ummi makes whenever we're sick-and it really works! Two days on that stuff and we're as good as new, alhamdulilah :) I think my mom should market it and sell it, but it sounds like it's a common dish. asalaamu alaikum, recipe for chicken corn soup ingredients: chicken with bones water 1 onion 5 whole black peppers 1 egg corn shredded carrots salt corn starch vinegar chili/cayanne pepper Boil water(amount for how much soup you want), add chicken, onion cut up into 4 pieces, black peppers, and salt for about 1/2 hour. Take pot off the heat, shred the chicken and take out onion pieces. Put soup back on medium heat. Add more water if needed. Add the chicken back to the broth, and also add corn(as much as you want), and also add the shredded carrots(as much as you want). Beat an egg in a separate bowl and slowly add it back into the pot while quickly mixing the soup so there are no clumps. Now take 1-2 tablespoons of corn starch in another bowl and add alittle bit of cold water and mix well. Bring the soup to a boil and add the corn starch while stirring the soup. continue this method with the corn starch until you reach the desired thickness of the soup. and its done. In a separate small saucepan, boil about 1/2 cup of vinegar and add a fairly even amount of salt and chilli/cayanne pepper, whichever. This is to add alittle flavor to the soup. Add as much or as little as you want into the soup according to your taste (its on the side so everyone puts their own). I hope i didn't forget anything. you can basically add how much or how little or the ingredients as you want. add alittle less salt then you would normally add because there will be salt with the vinegar and red pepper. Also if you don't want the soup to be all orange, then place the shredded carrots in a bowl of water and microwave for a few minutes to get rid of the color, then drain the water before putting the carrots into the soup. That was nice with the garlic bread. The next dish on my list is actually quite adventurous (for a pakistani anyway) - (spicy) chicken marinated in lime and coconut milk with peppers, on a bed of white rice. Kashif Wa Salaam |

slm, Shan is my best friend. You guys should meet him. He's usually hanging out at most indo-pak stores. He's a big help. He's orange with a red top, you can't miss him! have you guys checked out [url]http://www.meals.com[/url]? It has thousands of recipes to search through. Pretty tight. I loove the idea of cooking! I love cooking like five courses! Its so much fun. Its like I'm in art class all over again! I'm thinking about making chicken biryani tomorrow. I need to do it on my own though. Whenever I cook, my main ingredient is always my mom :) But I'm like Kashif, I have more fun cooking Italian/Mexican/American/Thai/Chinese cuisine over desi cooking. Take Care, Wassalam, Nazia |

slm I'm not a huge Italian food fan, it tastes really plain and can be messy with the spaghetti sauce. But apparently a lot of people are into it. Although I did try one dish with spicy chicken and shrimp with pasta, and that had some real pizzaz to it, and I really liked it. It does sound like it has a bit of a Thai twist, which is good, i really like thai food, and my friend recently taught me a very easy dish to make that tastes great! Spicy Peanut Chicken 6-7 chicken breasts vegetable oil (to cook the chicken in) 1 can coconut milk 1 package Taste of Thai Spicey Peanut Curry Spice Mix 1 cup fresh peanuts Chili powder to taste 1/2 med onion sliced and 1 small red and 1 small green pepper also sliced some House of Tsang peanut sauce to taste Crushed red pepper to taste 1. Take the chicken breast and let it thaw out. Cut it up into pieces. 2. Put vegetable oil in the frying pan and lightly brown the chicken on medium heat. (don't fully cook the chicken) 3. Add 1 can coconut milk 4. Add 1 package of Spice Mix (the package contains 2 envelopes of spice mix, use only 1 of them!) 5. Turn up the temp a little and cook the chicken in this sauce. Cook until the pieces are tender. The sauce should thicken so it's not so watery. 6. Add 1 cup fresh peanuts 7. Add chili powder, sliced onions, red & green peppers at the end to cook for a few mins 8. Add the House of Tsang peanut sauce to taste 9. Add Crushed red pepper to taste |

We made something similar called Spicy Cashew chicken. Main ingredients: chicken, mustard, tangarene preserve and cashews. It turned out really great! |

assalaamu alaikum jazakumullahu khar anonymous. I made the soup this afternoon and was quite happy with the result and so were my mum n sis. Just a few things to note though: i'm not going to put in any egg next time, insha'llah, i'll stick to the chicken only. Corn actually means sweetcorn in the UK & corn starch is actually corn flour over here. Kashif Wa Salaam |
