I know that agar agar is a replacement that can be found in health food stores- but I do not know how to use it.

Anyone know?

Asalaamu alaikum,

agar is made from seaweed, so is carrageenan and both are gelling/thickening agents.

I know halal gelatin is available... you can see gelatin(halal) labelled on many of the lollies and candy bars avail. in NZ...I'm not sure if you get the same whereever you are at.

I made a cheesecake once using vegetarian rennet as a thickening agent, tho I had to heat the cream after adding the rennet, so it would work and i poured it on the base when it was warm...so it kinda soaked into the base :(  but the cheesecake was yummy all the same.

Best way is to get some agar or carrageenan and experiment....perhaps make mini-cheesecakes with different levels of gelling agent in it and find out which is the best to use.

otherwise there could be a good business opportunity if you can get hold of the halal gelatin, re-package and sell it to your local community.

btw, I did my degree in food technology, if any of you were wondering ;-D
