I have some questions that I can't seem to find good answers
on.  Can you please help?

1.  I have heard that women can keep their last name when they marry in
Islam.  Is that true?

2.  Are people supposed to change their name when they convert to a
Muslim name?

3.  I read somewhere that men are not supposed to wear gold because it
affected their blood in some way.  Does anyone know about this?  Can
you explain?

4.  Is hell not always everlasting?  Are some people able to go their
and repent for their sins and then reach Heaven?  I read something that
gave me this impression.  Is it true?

5.  Are there 7 kingdoms of Heaven?  If so, will you explain?

6.  I completly understand dressing so that your body is not expossed,
but what is the importance of covering your hair?  Does it have to do
with the hair or is it just so that you are totally covered?

7.  At what age should girls begin covering?

8.  Is it wrong to talk to men other than family?  Where is the border
on male/female relationships?  I am not asking about dating type
relationships, but more like men from work or school.

Thank you so much.
1. I have heard that women can keep their last name when they marry in
Islam. Is that true?
Yes, it's true. The reason is because of the importance that Islam gives to the preservation of lineage.
2. Are people supposed to change their name when they convert to a
Muslim name?
They are not required to change it, unless the meaning of their name is Islamically inapporopriate.
3. I read somewhere that men are not supposed to wear gold because it
affected their blood in some way. Does anyone know about this? Can
you explain?
Men are forbidden from wearing gold. The reason that you have mentioned is not known to me. Allah knows best.
4. Is hell not always everlasting? Are some people able to go their
and repent for their sins and then reach Heaven? I read something that
gave me this impression. Is it true?
Hell is everlasting according to the overwhelming majority of the scholars. Heaven is everlasting according to a consensus among the scholars. Your notion about some people spending some time in Hell and then being transferred to Heaven is correct. This is evident from the saying of the Prophet (pbuh) in which he said that after a certain period of time, Allah (swt) will ask His angels to go and fetch anyone from Hell who had even an atom's worth of Imaan (belief) in his/her heart and put him/her in Heaven. However, those who associated partners with Allah (swt; and died in that state) will never escape Hell-Fire. And Allah knows best.
5. Are there 7 kingdoms of Heaven? If so, will you explain?
There are different levels of Heaven. Their exact number is probably mentioned in some ahaadith, I do not recall at this time. The more righteous people will attain the highest levels of Paradise, while those who are less in their righteousness will be in lower levels. The reward is sweeter and more pleasing in the higher levels than the lower levels.
6. I completly understand dressing so that your body is not expossed,
but what is the importance of covering your hair? Does it have to do
with the hair or is it just so that you are totally covered?
Let's leave this to another time, insha Allah.
7. At what age should girls begin covering?
Like anything else in Islam, the age at which people are held accountable for their deeds is the age of puberty. Therefore, once a woman reaches the age of puberty, it becomes obligatory on her to cover. However, it is often recommended for Muslim women to start covering before reaching that age, in order to get used to it.
8. Is it wrong to talk to men other than family? Where is the border
on male/female relationships? I am not asking about dating type
relationships, but more like men from work or school.
Let's leave this to another time also, insha Allah.

And Allah knows best.

Wassalamu alaikum.
