OK, here is my recipe for Karahi chicken. I usually don’t measure so I am trying hard to think what quantity I use :)
My technique is taste and add whatever you think is needed (although doesnt work all time :)

Ingredients
1 1/2  teaspoon garlic
1 ½  teaspoon ginger
1 teaspoon red chillies
1 teaspoon salt ( less or more depending on your tasted)
¼ teaspoon turmeric
1 teaspoon coriander ( if you don’t have it then it is also OK , it is for gravy )
3 medium size tomatoes
1 green pepper
oil ¼ cup
½ zeera  (help any one what is zeera in english – I have forgotten)

Direction
When oil is hot put zeera in it fry for 10 second  and immediately add chicken(in small pieces ).
Fry for sometime i.e. till the color of chicken becomes brownish.
Add garlic and ginger and fry again for may be 4-5 minutes –
Add  salt, chillies, tumeric, coriander,   and fry again (the flame should be somewhere between high and medium) for 10 min roughly.
When the color of oil changes i.e. it becomes goldern-yellow add chopped tomatoes and pepper. Mix it well.
Make the flame medium and cover it let it cook for 15-20 minutes. Keep looking so that it doesn’t stick to the pot. If needed add little(1/2 cup) water( this type of chicken doesn’t have that much gravy).
Keep checking till the chicken is tender – when it is put the flame to simmer for 5-10min so that the oil comes up( also called in urdu as “roghan”)
Your chicken is readay after that
IF you like really spicy
Then add 1 teaspoon chat masala,, 1 teaspoon black pepper and 1 teaspoon black seed and cook at simmer for 5-10 minutes – it gives a little achar chicken type flavour.

Wasalam
tq
PS: I hope it is making sense  as I typed in great hurry(about go home).

Thanks abc - my mind doesnt work when i am in hurry :)

Yes, shaan masalas are great - has anyone tried their Nihari and haleem? they give a professional taste :)
But , their masalas are too spicy/hot - i dont use whole packet just 1/2-3/4 of it.

Wasalam

As-Salaamu-Alaikum :)

If you looking for something mild try this :-

in a pot (of course!) add a pod or 2 of elachi, cinamon sticks, cloves and perhaps a garlic clove or two. For added bite, try adding a chillie (red or green). Heat this with a with a "little" water and steam chicken for about 10 minutes.  Drain all this out of the pot and rinse your chicken...that takes care of all the fat! :)

Now put that same pot (and hopefully your chicken is in there too :))back on the stove and add the following which must be combined and preheated prior to adding -

2 tablespoon butter, half cup tomato sauce (or chilli sauce if you like) and quarter cup mayonaise.  I like to add a dash of garlic sauce in here for good measure ;)

Add all this to the pot and let it simmer until chicken is done.

Insha_allah, the chicken should turn out soft and tender and well flavoured. :)
