| Assalamu alaikum I just made this yesterday, so it's still fresh in my mind. Its really good: 4 tbs of butter, softened 1 cup sugar 3 eggs (or if you want it really low fat 2 eggs+2 eggwhites) 3 cups of grated carrots (yup, that's three) 2 cups of flour cinnamon and nutmeg to taste (I usually use about 1 1/2 tsp of cinnamon and 1/2 of nutmeg, approx) 1 tsp baking powder 1 tsp baking soda 1/2 tsp salt 1/2 cup of raisins or walnuts or anything else you might want to use instead bismillah: cream the sugar and butter and add the eggs one at a time and beat it in between the eggs (of course :)) Add the carrots mix up the dry ingredients add the dry to the wet add the raisins or dates or whatever you used. That's it!! And it only takes 30-35 mn to cook in a 350 degree oven. The recipe calls for a 8 inch square baking pan but I used a 9*13 and it was fine. Bismillah!! :-) |

| Hmm, middle shelf I guess I have no idea about the gas mark. I'd guess 3 (they go from 1 to 6 right? It's 175 degrees C if that's any help. |

| Can someone figure out the portion and calorie count? Mariam, I pray Allah reward you for sharing! I am with weight watchera, All Praise is Due to Allah have lost 100 lbs so far.... So by you sharing a low fat recipes makes me smile and is a blessing... Salaam... ;) |

But I'm pretty sure it would work with less sugar, like 3/4 of a cup or 2/3. It is pretty sweet. I have this book, "1001 low fat recipes." A lot of time they use fructose instead of sugar, it's sweeter so they use less, and they tell you how to measure but I didn't really pay attention to it cause I can't get fructose anyway :) It's a nice book but... a lot of the recipes call for wine. Sr. Denise, ma sha Allah, you must have an incredible willpower and strength :) Al hamdu lillah for making you smile :) |
