mmm kunafa..it's kinda like Baklawa (Ba'lawa if you're Egyptian ^_~) Baklawa is made with philo dough and kunafa with shredded dough

I think the Greeks call kunafa, kataifi..
Okay when I make kunafa I don't follow any instructions.. and I'm awful at giving directions and recipes..but I'll give it a try.. Kunafa is real easy..if I can make it anyone can..

You can make it with nuts or ricotta cheese..(I like nuts...I don't like cheese baklawa or kunafa)

For the nuts it's really your choice..

I like an assortment of nuts..
I add coconut, some vanilla powder, cinnamon and sugar with the nuts

Basically you need a lot of ghee or butter..

I get a wok and melt the ghee or butter..seperate the shredded dough and mix thoroughly in melted ghee/butter. Make sure all of the dough is covered with the ghee really well.  I usually sprinkle a little icing sugar in it to sweeten the dough since the ghee or butter is unsweetened..but this is optional.

Kay I'm back from praying..I'm delaying my iftar just to type this..^_^)


then you get a pan.. grease it with ghee and butter really well... take half of the dough and just spread it out at the bottom of the pan and pat it so its flat and make sure there are no gaps..

Sprinkle the nuts on top and then get the rest of the dough and layer it on top of the nuts..

then you put it in a 350 degree oven and bake till brown...I'm not sure how long it takes..maybe 30-40 min..

then once it's baked you pour the syrup over it..

for the syrup..it depends on how sweet you want it...I usually do two cups of sugar and two cups of water..add vanilla, a cinnamon stick and a couple drops of lemon..sometimes I add two table spoons of honey as well....some ppl do 4 cups of sugar..(That's too sweet for me)..


This is the pan way..I don't know how to make those kunafa rolls.. on the box they give direction how make the rolls but I never tried it..

Oh I forgot to mention for the shredded dough..were I live some grocery store chains sell it..but you can usually get it from Arab stores..some Greek stores may hold it..

just teasing :-)
Is the dough like phyllo dough
and you put a layer on the bottom, then a layer of nuts then dough again?
kinda like lasagna?
It almost sounds like this special Moroccan dish, basteela, except it has ground nuts, chicken lots of spices etc
if I ever learn how to make it I'll post the recipe :-)

By the way, this is my 200th post.  Not suprising that it's in the House of kabab :)

Yup that's what I do

Some ppl do multiple layers....There are a variety of ways to make kunafa..

Instead of trying to explain it myself I did a quick google search typing in kataifi..here are the first few sites..I just briefly skimmed over them..
