[slm],

As far as I  know  it is some kind of additive used in baking products and it can be extracted either from animals or from vegetables.  So if it comes from animals and you don't know if its halal then there is a problem. Many products do not mention the source of it, so many muslims avoid things with mono and di glycerides in them.

mono and diglycerides are forms of fat which has been partially broken down.  fat in its basic unit is composed of a glycerol backbone with three fatty acids attached to it- this is know as a triglyceride. when one of the fatty acids is removed (by chemical reaction or enzymes) then there are only 2 fatty acids attached to the glycerol and this is known as a diglyceride and similarly when theres only one fatty acid attached it is a monoglyceride.  Our bodies break down the fat we eat in this way to release energy.

Eqbal is right, the fat can be animal or plant origin. Let me know if you need more info, I've got textbooks on this stuff :)
