This is my invention- if you make it- and sell it I -want royalties!


Fudge Truffle Cheesecake

Crust-
1½c. Graham cracker crumbs
1/2c. Confectionary sugar
1/3c. Cocoa
1/3c. Butter- melted

Mix together. Press into a greased 9 inch spring form pan- going a little up the sides.
Bake @ 350 degrees for 10minutes. Cool.



Filling-
12oz. Semi Sweet Chocolate Chips- (the better the chocolate- the richer the cake!)
24oz. Cream cheese- softened
14oz. Sweetened condensed milk
4 Eggs
2t. Vanilla

1.Melt the chocolate.

1. In a large mixing bowl cream the cheese and add the milk.
2. Add the eggs one at a time.
3. Add the vanilla
4. Add the melted chocolate.- mix very well.
5. Pour into the crust filled pan.

1.Put a bowl of hot water in the oven, lower shelf. (Steam Bath)
2.Put the cake on a cookie sheet.
3.Bake in a 300 degree oven for about 55 minutes.
4.Turn the heat off and let the cake sit in the oven for 1 hour.
5.Refrigerate.

Decorate the top with strawberries and drizzled white chocolate!

This cheesecake is also very good.

[color=Purple]Orange-Glazed Cheesecake with Gingersnap Crust[/color]

CRUST:
1 cup gingersnap crumbs (about 20 cookies, finely crushed)
2 tablespoons sugar
1 tablespoon butter, melted

FILLING:
2 (8-ounce) blocks 1/2 fat cream cheese, softened
2 (8-ounce) blocks cream cheese, softened
1 (8-ounce) carton reduced-fat sour cream
1/4 cup all-purpose flour
3/4 cup vanilla sugar* [recipe follows this one]
3/4 cup sugar  (if you really like the vanilla flavour, you can replace this with more vanilla sugar)
1/4 cup thawed orange juice concentrate, undiluted
1 tablespoon orange juice (this replaces the alcohol from the original  recipe)
3 large eggs
2 large egg whites

TOPPING:
1/2 cup orange marmalade
1 tablespoon orange juice
1 orange, peeled and sliced

1.  Preheat oven to 325 degrees Farenheit

2. To prepare crust, combine first 3 ingredients, toss with a fork until moist.  Press into the bottom of a greased 9-inch springform pan.  Bake at 325 degrees for 5 minutes.

3. To prepare filling, beat cheeses and sour cream in a large bowl with a mixer at high speed until smooth.  Lightly spoon flour into a dry measuring cup, and level with a knife.  Add the flour, sugar, and next 3 ingredients (sugar, juice concentrate and juice), and beat well.  Add the eggs and egg whites, 1 at a time, beating well after each addition.

4.  Pour the cheese mixture into prepared pan.  Bake at 325 degrees for 1 hour and 10 minutes or until almost set (You might need to add another 5-10 min. to this time, depending on your oven).  Cheesecake is done when center barely moves when pan is touched.  Remove the cheesecake from oven, and run a knife around the outside edge.  Cool to room temperature.  Remove sides of pan.

5.  To prepare the topping, combine marmalade and orange juice.  Spread half of mixture over top of cheesecake.  Cut the orange slices in half, and arrange over cheesecake.  Spread with remaining marmalade mixture.  Cover and chill for at least 8 hours.  Yield:  16 servings.

[color=Green]Vanilla Sugar[/color]

This is a great way to add the flavour of vanilla to any recipe that calls for granulated sugar, without the alcohol contained in vanilla extract.

(this recipe is from The Naked Chef cookbook by Jamie Oliver)

2 lb. granulated sugar
4 vanilla beans

You need a food processor for this one.  Put the vanilla beans in the bowl, blitz, scrape the sides and blitz again.  Add all the sugar and blitz for about 2 minutes.  Sieve the mixture into a bowl, return any lumps to the food processor and blitz again.  The result will be a slightly ashy-colored mixture.  (If you store it in an airtight container it should last about a year before spoiling.)

If you want a more subtle flavour, you can store the vanilla beans in an airtight container with the sugar (without grinding).  After a while, the sugar picks up the flavour of the vanilla.

You know the Philadelpia Cream Cheese box wrapper thing?  The Philly Cheese recipe on there is also very good.

:oNone of this reduced, fat free stuff!

I think you should post your vanilla sugar recepie seperate!- This is the very first time I have seen how to do it !- Make sure your topic says Vanilla Sugar!

No, I haven't gone mad -- if anybody wants to make the full fat version, they only have to replace the low fat cream cheese with the regular.  Besides, my family has served this to guests -- no one ever knew that there was less fat in it.  It isn't even all that much lighter that the regular. (just avoid the no fat cream cheese like the plague. :P )
