I was wondering if anyone out there can prepare delicious (or at least do know the recipe) for an aubergine dish called Imam Biyaldi?

Your help is very muchly appreciated , thank you.

here's a recipe for it.  i've never made it, but it sounds unbelievably simple...

debate over the name of the dish:  he fainted with pleasure, or at the cost of the olive oil.

(i'` remind you not to forget to salt, drain, and rinse your eggplant.)

Imam Bayildi

6 long med. eggplants                 1 tsp. sugar
Filling (below)                               salt
1/2 c. olive oil                              juice of one lemon
1/2 c. water

prepare the eggplants for filling.  (several choices for how to do this:  essentially you can choose between slicing them lengthwise and scooping out a hollow, cutting off the end and scooping them out from the end, or paring off strips of skin in stripes - so they can be salted - and stuffing them through a lengthwise slit.)  
Stuff with filling.

arrange side by side in a large pan.  pour the oil over them.  mix water (~1/2 c.) with sugar, salt to taste, and lemon juice.

cover the pan, simmer gently until soft - about one hour.

remove from heat, cool.  serve cold.


Filling  (yalangi dolma - "false meat")

3/4 lb. onions                                         3/4 lb. tomatoes - skinned, seeded, chopped
4 Tbsp. olive oil                                     salt
2-3 large cloves garlic, crushed
one bunch parsley, finely chopped

slice onions thin.  soften gently in olive oil - do not brown.

add garlic, stir 1-2 minutes until fragrant.

remove from heat, stir in parsley and tomatoes.

season to taste with salt, mix well.


perhaps you'll also hear from someone who has made this.

Gosh what a lovely name!!
Om, I went to google.com and entered in "recipe for 'imam biyaldi'" and quite a few references came up! I think you should take a look. Some of them look quite promising. I have never made this dish but I love to cook (I used to have my own catering business when I was in college!) and I am anxious to know how you fare with whichever recipe you use! Hope this is of some use to you.

Thanks for the recipe and the urls :) Now I have so many versions of Imam Biyaldi to think of or maybe to try out ;D  I also found a few versions of why the dish is called Imam Biyaldi (Imam fainted) :D

Addison, thanks for the compliment:) I chose the name because I love watching sunset..the color...the beauty...the sadness (its like saying goodbye to the sun). Above all its one of the most beatiful creation by Allah subhanahu wataala :)

Actually my mom does most cooking since I spent most time at work on weekdays... so cooking has not been a routine for me. Doesnt sound like a proper lady huh :-[ Insha allah I hope to be a great cook like my mom and trying out diffrent dish than my mom's should be a good start ;)

Dear "Sunset,"

If you want to really dance in the kitchen with your mom, (so to speak ! , ) I have a recommendation!... It is a cookbook by Goria Obayda called, "A Hundred and One Middle Eastern Delights."  It's a great book to use to start "polishing your chops" as they say here...It has lovely photos of what your finished recipes should look like and lots of tips and anecdotes to keep you in the right humor, should you ever feel less than sure of yourself.


I'm pretty backdated, so the book might be replaced now by some sort of computer-related, om,...thingy (REAL technical of me, isn't it. I don't know much about computers at all!! But I am guessing that you will know what I am talking about ! )

You mentioned that you had researched the name of the dish...Mwishka's comment about the price of the olive oil cracked me up!
