Need recipe for flapjacks

does anyone have a good recipe for flapjacks. i tried one at the weekend and it was too sticky - not enough oats, and the flapjacks ended up really hard and toffee-ish and they were toooooooo sweet (if that's possible  ;) )

hmmm...flapjacks is just another name for pancakes, which i can give you a guaranteed-to-work recipe for, but not enough oats and too sticky and too sweet makes me think you're looking for a recipe for something else...   maybe it's a regional difference..

if it helps or is what you want, below is a recipe that will make nice pancakes.

ALWAYS make sure your griddle or skillet is medium hot - not too hot, and well-buttered, when you pour the batter on.  if the butter is burning, the temperature is too hot.  when the pancakes have lots of tiny bubbles across the surface or around the perimeter, they're ready to be turned.

and remember that most recipes are written as if medium eggs are used, so if you're using a different size you MIGHT have to adjust the liquid.
you might also have to adjust liquid based on what type of flour you use (all-purpose vs. pastry, or bread flour in a crunch), and whether you use white or brown sugar, or honey, as sweetener.  (or whether you add bananas or other fruit, or, as you mention, oats or other grains.)  honey is about twice as sweet as sugar, so use half the amount and adjust your liquid accordingly.

and obviously everyone would have their own favorite spices to use.....  i use cloves sometimes, too.

1 1/4 c. flour
3 tsp. (1 Tbsp.) baking powder
3 tsp. brown or white sugar
1/2 tsp. salt or less
cinnamon - lots
cardamom - medium
allspice - little

mix all dry ingredients together.

1 c. milk
1 egg
2 Tbsp. oil

beat egg, mix with wet ingredients.

fold wet into dry.  pour onto hot griddle.
 

do not mix too much, will make pancakes tough.  you want to incorporate air into the batter.  it should be thick but liquidy, pour easily.

no no no.. pancakes are pancakes - flapjacks are flapjacks - little square oat thingies.. maybe it's a british/irish thing? Anyway I'd like the recipe too, if anyone posts it up  ;D

i think eleanor's right - it must be a brit thing.  flapjacks here are made of crushed oats and syrup and stuff (maybe you guys call them oatcakes??? )
