Lady’s Fingers Pachadi (Without Coconut)

Ingredients: A. 1 cup tender lady’s finger slices, 1 cup curds, a little sugar.
Seasoning: B. ˝ tsp. Gingelly oil, 4 dry chillies, ˝ dsp. Coriander, ˝ tsp. Cumin seeds.
To taste-salt: Oil to fry lady’s finger slices.

Method
1. Cut lady’s finger into slightly thick round slices. Smear it with a little turmeric and sufficient salt. Fry it crisp.
2. Beat the curds well without adding water. Mix a little sugar with the curds to balance the sourness. Cool it lightly be keeping it in refrigerator.
3. Heat gingelly oil and broil chillies, coriander and cumin seeds one by one. Powder these together. Mix with sufficient salt.
4. Pour the curds into an attractive glass dish. Sprinkle the masala powder over it decoratively. Just before serving add the fried lady’s finger crisps. Use before the crispness changes.
