Well, looks like ramadan is just around the corner again Alhamdolillah and I've been storing my freezer for the iftar fry ups so that I can concentrate more on my ibaadat  during ramadan :-[.  Anyway , I thought  I would post a few tried and tested recipes  :), so here goes:

MINI KIEVE BALLS:-

1LB boneless chicken,
ginger/garlic paste 1tsp
salt to taste
crushed black pepper 1 tsp
3 tb sp low fat mayonaise
1/2 tsp dijon mustard
1tbsp lemon juice

a block of softened butter
bread crumbs
1 egg beaten

Marinate the chicken with all the ingredients and leave overnight in the fridge. Mince in food processor. Spread bread crumbs on a plate , take about two table spoons worth of chicken mixture in your hand and flatten it on your palm . Now take about a teaspoon worth of butter and put it on the chicken .  Now  roll the mixture into a ball .
Dip in egg and roll in bread crumb and deep fry.
Makes about 20 balls.
Serve with chips or wedges. Kids love  them.

Ok, so here's another one:

CHEAT'S SAUSAGE ROLLS:-

1 packet  Puff pastry block
1 lb boneless chicken
ginger/garlic paste 1tsp
crushed green chillies 1tsp
salt to taste
monosodium glutimate 1/2 tsp
lemonjuice 2 tbsp

Marinate chicken with above ingredients and leave overnight then mince in the food processor.Divide into 4 portions. Thaw the pastry and cut both blocks in half length wise.  Now roll each block into a rectangle of length about 15cm and width about 10cm. Now take one portion of chicken and roll it into a sausage like shape to suit the length of the pastry, and place it on to the middle of the pastry. Roll the pastry into a log. Cut into pieces.
Brush with egg and bake according to package instructions.

Makes about 12 rolls per block.

HERBY CHICKEN CUTLETS:-

1lb bonelees chicken
2 slices of fresh bread
2 large potatoes
1 bunch spring onions
1 medium onion
1 bunch fresh corriander
6-7 fresh green chillies
1tsp ginger/garlic paste
salt to taste
1 tsp coursely crushed black pepper
2 tbsp lemon juice

bread crumbs and eggs for coating.

Marinate chicken withginger/garlic paste, salt ,pepper and lemon juice. Mince in the food processor. Boil and peel potatoes then mash them well and mix in to chicken mince. soak the bread and 1/4 cup of milk untill it's mist. Chop onions, chillies, corriander and spring onions and mix into the chicken/potatoe mixture along with the bread. Divide the mixture into portions and roll in bread crumb, dip in the beaten egg , and then recoat it with bread crumbs again for a crunchier coating. Deep fry and serve.

Enjoy with [] or with zam-zam cola ;).

Dijon mustard was white wine in it.  Perhaps regular mustard will do instead?

Not all has white wine in it...

I was looking for one last week to make Ceaser's dressing. Just gotta be slightly thorough with the ingredients that's all.

But i ended up buying a ready-made ceaser's salad dressing ... haiii... And I thought I'd go home-made  ::)  ;D

Like sis Barr said, not all dijon mustard packs have white wine but sure, regular mustard works just fine.

i tried looking for the recipie...it seems i don't have much luck when it come to searching in the ARK. Whenever, you get a chance sis Bushra, i'd really like to get the recipie. I have tried to make soup in the past, like cream of vegetable, but they were a complete disaster  :) ! I hope this one is not too hard  ;)

Potato Munchkins and Chicken Soup

Assalamu'alaikum :-)

I try not to spend a lot of time in the kitchen.. so, inshaALlah, here's some Barr's Easy Cooking for Dummys  :-* Plus, its healthy too ;)

D'meal 2-in-1 : Chicken Soup and Potato Munchkins

[u]Chicken Soup[/u]
[color=blue]
Water
1/2 a Chicken (skinned) - depends on size of chicken, cut it in 5 pieces or smaller.
3 pieces of Shallots (may substitue with onions)
An inch of Ginger
3-5 Cardamons,
2-3 Star Anise,
A Cinnamon Stick,
10-15 Cloves
Chinese Celery & Spring Onion (may substitute with corriander leaves) - chopped
Baby Carrots (or any other hard vegetablesv like celery, potatoes, peas)
Pepper (black/white)
Salt to taste [/color]


Say Bismillah :)

Chop shallots and Ginger.
Dump it in Boiling water.
Dump Spices too.
Dump Chicken pieces too.
Dump Carrots.

When cooked, add salt and pepper to taste. Garnish with the Chinese Celery and Spring Onion. Hmm, some may call this... Broth ;)

With the Chicken & Carrots that you have boiled, U can use that for the Potato Munchkins.
------------------------------------

[u]Potato Munchkins[/u]
[color=blue]
Water
3 Medium sized potatoes (halved length-wised) - buy the ones with thicker skin.
2 pieces of chicken (from the soup above - shred them)
Boiled Carrots (from the soup above)
Fried Shallots (optional)
Crushed Black Pepper
Mixed Herbs to taste (Dried) - optional
Salt to taste
Chopped Fresh Parsley - optional
Grated Cheese (2 portions) [/color]

Say Bismillah :)

Boil Potatoes
When cooked, drain them.
Scoop the insides of the potatoes, leaving the shell nicely intact

Mash the scooped potatoes with all of the other ingredients except parsley and a portion of cheese.

Mix them well.

Stuff the mashed potato mixture back in their shells. Pile them up... don't have them flat. Its nicer if its all piled up and rounded on top.

Put grated cheese and finely chopped parsley on top of the potato mixture, and bake till cheese melted. Serve hot.

For that balanced meal... I'd serve the above with .. U guessed it ;) Ceasar's salad. (with Weight Watcher's dressings ;))

A nice light meal for 2 people. But looking at the history of eating Potato Munckins.. I'd say...  bake more! Its so eatable, mashaAllah. The children love it (plus adults too).

U can have your own variation of Potato Munchkins. U can substitue minced meat for chicken. For the soup, U may want to make meat balls instead, or fish balls. And use those balls, for the Potato Muchkins.. just cut them up to smaller sizes.

Another variation is get miniature baguettes, sliced lengthwise, scoop the insides out, and place them with the mashed potato mixture instead.

Oh yes.. please feel free to adjust in accordance to your taste.. all of the above are estimates. I cook for more people.. not just 2.
