As Salaam Aleikum
I like to cook my own dinners whenever I have the time to do so, but so far have failed in making a hummus I can feel proud of. I'm pretty sure my fajitas are the best in  the county ,or any mexican dish for that matter, but I really crave hummus like if I had been raised in Ramallah,please help !!!
If your recipe is The Chosen One,I might even give away my very own recipe  on  what I call  "The 100% Halal Chicken Shawerma Tacos with Spanish Rice  Dinner"   :P
By the way,how common is it for brothers to really know how to cook? In my case, living on my own since I was 18 pretty much forced me to learn and is been quite a few years since last time someone rejected my food for being a health risk . 8)

Here's a recipe I found browsing the net.. haven't tried it myself yet but it looks pretty simple.

Hummus

2 cups chickpeas, cooked or canned
1/3 cup fresh lemon juice
1/4 cup tahini
2 cloves garlic, minced or pressed
1/4 cup or more water
salt to taste
1 tablespoon olive oil
1 teaspoon paprika


Drain and rinse the chickpeas. Place in a blender or food processor with the lemon juice, tahini, and minced garlic. Blend well, adding water as needed to form a smooth paste. (Add less water to make a thicker hummus for sandwich spread.) Add salt to taste.  Scrape hummus into a covered container and refrigerate overnight or at least three hours before serving.  

Remove hummus from refrigerator 1/2 hour before serving. Spread onto a shallow plate, swirling top with the back of a spoon. Drizzle olive oil and paprika over top.

Serve with pita chips or bread triangles and raw vegetable for dipping.
Makes about 3 cups, enough to serve at least eight as a party dip or to fill 6-8 sandwich

Just to add to the above recipe, I also heard that some people add either a little mashed potato or yogurt to give it that smooth consistancy. I believe it's the potato though.
But you know Aztec, I know what you mean about that yummy type of hommus. I tried it in Syria once and it was to die for!

Ok,ok!!!
No need to cry Sis !, not until we get to the onion soup part anyway   ;D
In the meantime,how about another one ?mmh...maybe um,it's hard to label some of this stuff,since often is things I got to eat south of the border and ended up trying my own version here. For instance,I try to use olive oil instead of the old fashioned canola oil ,and with so,e exceptions it is actually tastier and not as greasy as the original. Funny what the wisdom of Allah makes you come up with when you are growing up by yourself and begin using the kitchen after getting tired of relying on the restaurants for that "special" thing you happen to be craving at the moment.
Here a simple snack,let's call it ...how about  "Lazy bro's light dinner"

3 corn tortillas
8 thin slices (maybe as thick as say,a quarter coin)of either cheddar or  monterey jack cheese
salt
Optional  : Some pepper sauce (here in L.A. the default sauce in mexican restaurants  is the brand "Tapatio",but even Tabasco is ok)

Heat the tortillas in one s griddle,but instead of spreading them up on it,leave them stacked up and just change the side that remains at the bottom,that way they end up hot but soft,not hardened .You don't want the quesadillas to be all crunchy at the end. once they are hot enough take them uot and spread the cheese among them.Do this on only one half of tortilla,so it's easier to fold it in the middle. Once you have folded them,just turn them over until if feels that the cheese has melted.Take them out ,put some salt on them and the optional hot sauce.
It takes no more than 10 min. to do the whole thing before u r sitting down laughing at the nonsense of the Fox News talking heads !

but i think you got it wrong bro..it's called "smart sis's quick dinner" ;)

oh and i add tuna  ;D (the yummy ones that you get from arabian stores not the chewed-up-washed-with-water-flavor type found in kroger)

Yes,I know what you mean,those dolphin-for-tuna-not-even-a-cat-eats deals ,yack!
But then,if u add tuna to the quesadillas,wouldn't that make it fishadillas or something like that?  ???
One more thing,how good are the tortillas' quality in your area?

                                             Hummus Bi Tahina

3/4 cup dried chickpeas
juice of 2 lemons
2 garlic cloves, sliced
2 tbls. olive oil
pinch of cayenne pepper
2-3 cup tahini paste
salt and ground black pepper
extra olive oil and cayenne pepper for sprinkling
flat leaf parsely, to garnish

(you can use canned chickpeas instead--2 14 oz. cans. Tahini paste can be purchased from most stores or health-food stores)

1.  Soak chickpeas in cold water overnight

2. Drain chickpeas and cover with fresh water in saucepan. Let boil and boil rapidly for 10 minutes. Reduce heat and let simmer for about 1 hours until soft. Then drain.

3. Processs chicpeas in food processor to smooth puree. Add lemon juice, garlic and olive oil. Add cayenne pepper and tahini and blend until creamy.

4. Season the puree with salt and pepper. Sprinkle with oil and cayenne pepper and granish with paresly leaves

It's a good dip for vegetables or a sandwich filler as well. Good with crackers too.

 that "lazy bro's light dinner" sounds muy delicioso pero come on ese give a chica your original posted recipe.... please!!  LOL

 ever since you posted this I have been craving Mexicano food!!!  LOL

 Well, it ain't Mexican, but kinda close... I am cooking paella right now!!  :)

 Tapatio is the only one I use!!!   ;D

Thanks for the hummus recipe!  I get so tired of buying it and haveing it taste bland, I LOVE garlic ;D.  Can it be made with eggplant?  Do I have to use chickpeas or can another type of legume be used?
