There was a rumor that ladies have totally lost the art of cooking, i looked
around me and said "naah"... BUT... now i realize how wrong i was, well it wasn't my
mistake its just that i was yet to see things in their totality :P

This thought/expeience made me want to ask that can sisters in here really cook
??? well i wont be surprised if the majority of you "only" know how to fry an
egg!! its another story that whether it would be edible or not after you are done
"frying" it :P

SO, honestly, how many dishes can you cook ?
or you just "try" to "fry" eggs :D

You may find it interesting that frying a perfect egg is one of the hardest cooking feats there are.

At culinary institutes, it is a significant part of a final grade.

I can make cheesecakes, international dishes and the most complex banquets... but i can not fry an egg!

When my hubby and I had our "engagement contract for marriage talk" I made it very clear for him not to marry me if he expected breakfast! ;-) :-)

I can cook *almost* anything Alhamdulillah :)  Carrot cake, my famous feta dip, swordfish shishkabob, baklava, a variety of stews and daals, omelettes, fruit and flower (yep...edible flowers!) salads, soups from scratch ,etc  :-/

But I can't make bread (ie: pita)...yet -- just have never learned.  And for some reason, I can't cook rice!  No mater what I do, it always ends up too starchy...and sticky :(  or burnt at the bottom of the pot!   :'(

i like to cook i hardly ever do it though....

i can make pasta dishes, some deserts, breakfast.... etc

it really helps when it comes from the box..... hahah

nistar - my rice burned the first time and i realized the problem was because i left it to cook for 7 - 10 minutes without checking on it... rice needs to be checked on.. every minute or so go back and stir so that it oesnt stick to each other and wont gt burned... so after ten minutes of cooking turn off the oven and keep stirring until it cools down a bit...

serve and enjoy  ;)

I like to eat most things that involve a large amount of chocolate.   :D

About a year back I posted on here how to make boiled rice.  Many of the people on board were impressed with that, as it seemed like they didn't know how to cook.  So far the only person on this board that I have read about that has any cooking skills is Kathy, she's provided incredible recipes and it seems like she knows what she's talking about.  It would be nice to read some of the other people's favorite dishes and their secret ingredients and techniques.  

Swordfish shishkabobs sound interesting.  One thing I've noticed about swordfish though is that it tends to get dry while cooking as compared to other fishes.

this appears to be a not so boring thread (started by a brother, of course. ;) )

I can make tea, and i can cook pasta too...er  :-[..and...and...AND...thats about it.
Oh yea i can make hard boiled eggs cause we have this machine where you put the egg in and switch the power button and after a few minutes its cooked  :D

My secrets are my mom (ofcourse), my sister (who can cook all kinds of foods, deserts, appetizers from like every type of country , mash'Allah), my aunts who cook very good and these sites :P

www.allrecipies.com (this is just an excellent site, Alhumdulilah that gives you all kinds of foods, drinks, and deserts divided into categories with ratings and reviews.)

www.desicookbook.com (this is good for those of you who are living alone in dorms ect and miss mommas food.)

ok now tell me all your secrets!

ps about losing the art of cooking, you know I went to this party where there I guess you call 'modern' ladies and they were telling me that I shouldnt cook haath ki roti for my husband from the beginning or else it will become a habit ::) hmm something to think about  :P nah then I was thinking that haath ki roti is suppose to be very good for you and gives strength so heh if they dont want their hubs to be healthy then their prob right..hm or no? :)

pss for the rice you should put alot of water and when its almost fully cooked then drain mostly all the water. This way it wont burn and it is healthier. Leave just a little water then close the lid and put on low for about 10 min.

I think the quality of rice also affects the way it cooks -- I know my friends who *can* cook rice (rolls my eyes because I still can't believe I can't cook the stuff!), always note that the rice from the desi markets are of a higher quality than the stuff you get at Safeway or A&P :P  Thanks for the tip Nouha -- I'll try that out next time!!   :-*

Brother Bhaloo - I agree, swordfish does dry out quickly -- which is why you need a great marinara sauce!  I let the fish soak in olive oil, fresh basil and garlic, salt and pepper, and some flavoured vinegar (rice, seasoned rice, hot pepper, herb, whatever your taste buds are craving!).  The fish is then skewered with chunks of zucchini, whole garlic, red onions, red, orange or green bell peppers (whatever else you wish) -- and is grilled (or you can raise the grill in your oven to the top level, set to broil, and constantly turn the skewers).  To keep the fish moist, brush on the remaining marinara as you cook!  Et voila!

Assalamo elikuim

I can cook almost all Pakistani dishes( whether they are tasty or not is another story :) but they are edible :) all of my family members are alive and healthy :) )  also can cook easy non-Pakistani dishes like speghetti,taco,betty crooker brownies etc.
Somehow I have a hard time making roti but paratha is no problem. My kids love meetah(cheenah/sugar) paratah(sweet bread pita like). Infact last week was my older son's last day of school and he wanted me to make 48 meetah paratahs for his school!!!
O yes, just for the record I learned all the cooking after marriage sort of on the job training :)

PS: For the plain boil rice , just add double number of cups of water i.e if you have 1 cup rice add 2 cup water. Let it boil for couple of minutes and then turn the fire to simmer adn cover the lid for 10 minutes or so. Also if you wrap a moist kitchen towel on the lid and then cover the pot with it, rice will not be soggy.

 I LOOOOOOOOVE to cook!!!  But hate to clean  LOL
 
  My specialty would probably be Japanese food but I can cook a whole wide range of foods!!  

   Now, I've posted this before, but the best way to make rice for those of  you that have trouble would be to buy a rice cooker.  Rice cookers are a must in any Japanese household!!  Now, you can cook basmati rice in a rice cooker also--just don't forget to add the salt!!  Sometimes I add oil with the basmati rice also.  

 In my home, I have Japanese, Basmati, and Spanish "Bomba" rice in my home.  No Uncle Ben's no Minute rice....  YUCK!!

Rice cooker?

I thought rice was the easiest thing to cook  :o Just dump the rice in some water, then heat it. I think

That is how I saw my wife doing it.  :-/

well  actually this year im starting to learn how to cook more dinner foods ..thanks to a good friends of mine so under my belt i know how to cook, lasgana,chicken alllfredado,enchillada,and i  can do alot of things with pasta haha . but im a pro at desert type things , brownies,cookies,pies,cobblers,....still have yet to master cheesecake .
and i JUST learned how to make rice this year i do have to say i  perfer basmati rice to uncle ben's soooo much better.. hopefully when i get married someday i ll know how to cook more things.

Thats a norm, isn't it ? :) and i've seen guys who can cook real good, once i went to meet this dawah jamaat of doctors who had cooked palao "chicken with rice", man it was tasty. I myself once cooked "aaloo gosht" (chicken curry with potato) when i was on a three day dawah/learning tour (best place to learn cooking coz men are all at their own :P), used too many tomatoes rest was all fine. Here are the thingies that i can cook

* "aaloo gosht" (chicken curry with potato) Pakistani Dish
* Fried egg, boiled egg, egg with pepper/red chilli and onion, sweetened egg :) :)
* and ofcourse, me can prepare tea (a must for everone) :)

Never tried baking "roti" coz i know i'll end up making map of some country :D

MashAllah you sisters look good at things. Rest of the sisters on this board might be inspired by you and start learning the "real cooking" :)

:-* my only complaint with the thread is that we cannot do any taste testing here  :(  I have to say Emerald literally made me hungry with those dishes she posted.

The rice issue...... hmmm, that would be my only recomendation for a non-stick pan in the kitchen..... rice cooks very well in non-stick & cleans up easy too... although I've always wanted to try the rice cooker, anyone who has one has sworn by it. I read once too that after rice cooks if you remove the lid & fluff it & let it stand for 5 minutes to air out.... the texture improves, & it's true... I'm only that picky when it comes to making Kosheri though. ((cleaning it really well before cooking too helps with the starchiness))

Another thing that makes a difference in tomato based dishes is if you use real (did I say "real"  :D I hope to shout... I suppose I ment "fresh"  ;)) tomatos & peel them first ... always makes a huge difference in the taste... to peel them just place them in boiling hot water ~ 10/15 seconds & then into iced water until the skin splits..... it's not so bad to do once you get the hang of it..... it's worth it too when others rave over the difference in taste.

Are you serious about the cookbook Caraj.... that sounds like a fun idea... I'd do it.... I'd even pay for my copy that would be alot of fun... & a joy to share recipes with each other. ((ok what happened to Caraj's post??  :( ))

Recently learnt how to make a perfectly circular chapati and a perfectly square paratha.  Alhumdulillah...my mommy is so proud of me :)

I can cook fine, I just don't eat (no, I'm not anorexic, I just have a tiny appetite and a natural affinity to salad to fresh fruit), and so I don't find it a useful usage of time.

Buy your wife the heaviest best quality pots and pans you can afford. This will make all the difference. It is almost impossible to burn a pot of food if you get min 5 ply layered aluminum, stainless steel pots. Also the lids will fit tightly and there is no need for towels or extra plates to hold down the food.

A well made set will provide even cooking and last a life time. In 1980 I bought an expensive set, an old timer gave me this advice, it is still gorgeous looking, performing wonderfully and I have never had to replace it. Nor have I ever burned any food in it.

When I got married my hubby bought some large cheap pots... ([i]finally he had a wife and his eyes were bigger than his stomach[/i])... I must have ruined three meals before they went into storage!

Printing is cheap, no need to pay for a copy.
I'll re do the post a little later today. I thought it would be fun to share each others recipies and have it in a book form. Nothing fancy, just copier and have the printer staple it in the middle and have a card stock cover.

I luve to cook. I can cook almost all the Sri Lankan Moorish Dishes, and Rotis and savory pastries and appitizers and my speciality is Hyderabadi Biryani.
My friends love that, which means I get bullied into to making it often even though its a time consuming process.
I can make good breakfast and eggs are quite easy. I think if you like to eat, you can learn to cook since you would know what you want it to taste like.
Baking is my problem though. I've just started to learn to make cakes. I am only good at Lemon cake. I would luuve to be a good baker and welcome any advice. My next attempt is Jewish Apple Cake. It tastes so so so finger-licking-good!!!! As you can see I like to cook AND eat :)
I don't know if it is considered cooking per say but I like to make drinks. Fresh juices and mix drinks [non alcoholic]. My non-muslim friends say that if I did not have a problem with alcohol I could make a good living as a bar tender. :) Maybe I could start a non-alcoholic bar! Would you guys come? My drinks don't just atste good but they look good too. heh heh heh []

Oh u mean where is your "how to" list "brother" :).. aight here goes.. we'll begin from the basics... EGGs obviously :P

Frying an egg :
1- Hit it gently in the middle with a spoon so that it cracks.
2- Put some oil in the frying pan and place the egg in it (oh dont forget to take the shell off :P)
3- Let it fry after putting some salt on it (according to ur taste) and also keep pouring the oil that u already put in the frying pan on the egg so that it get fried from above as well
4- 2 minutes are enough i guess (even forgot the last time i did it :) )

Egg with pepper/Red chilli and onion :

1- Repeat steps 1 and 2 from above but this time put the egg in a pot without the oil. Put some pepper, red chilli on it (according to ur taste), cut some onions real small and fine and put them in as well. Now STIRR it and do it for 20-30 seconds

2- Put some oil in the frying pan and the mixture in it. Keep beating it gently till 3-4 minuites, it'll do inshAllah :)

There you go, now you caj atleast prepare basic breakfast, rest of the recipies involving eggs are yet to come


and hey!!! don't forgot to put the frying pan on the stove and make sure that the stove in lit while following the steps :D

Yah Alhumdulilah comes with practice. Thing that i had more of a problem with after getting the circle shape right is that one side would be too thin and one side would be too thick. Now Alhumdulilah Im better at it after doing it everyday for a while...

:) I love cooking! It's a lot of fun for me. But the mess isn't.... :P  For those who don't know how, but want to, I would suggest making simple things at first, and then slowly working your way up to more involved dishes.  And as someone had posted earlier about rice makers, they are very helpful. You just put the rice and the water in it, and it cooks itself!
Me and my sister had to learn how to cook when we were little, since I my parents worked until really late at night, and couldn't cook for us. We made some really strange stuff...Like meatloaf balls, and there's even a picture of them,  :o I don't know what we were thinking!! We made a lot of corn bread and tacos in those days too.

Some of the very basic rules of frying are not met!

Example: Hot pan cold oil!
A pan must be very hot before you add the oil.
Then the oil must become hot before the egg is added!

um nomi actually it is hard to cook edibile food....why dont you start with you egg (because your recipe above sounds pretty gross as kathy mentioned) and when you have mastered  cooking then you can tell other sisters they need to learn how to cook ok? alrighty  [wlm]\

Mmm....I can make chicken parmesan ( My husband likes to wipe the pan dry with pita so not a spec of sauce remains  ;D ) I don't know why I forgot to put that on my previous post. Ooh and shrimp lo mein. My daughter's favorite!

Now I don't know why people have such a hard time cooking rice.  ??? Like with basmati rice, it's always 2 cups water to 1 cup rice. The secret though is to keep the heat as low as possible to let it take its time. The best cooking comes from alot of patience I think.

I saw this really simple recipe for Basmati rice from Nigella ( I love her show!) and tried it out - sooo yummy!

Cook basmati in chicken broth that has the rind and juice of 1 lemon, saffron, cardamom, and of course salt. She also added toasted nuts after the rice was cooked and some sauteed chicken pieces that were marinated in yogurt, cinnamon, and some other spices.

Anyway, what I have trouble with - ALWAYS is dough. I could never get the hang of it. So if anyone knows any secrets...? ( And no store bought dough please  ;) )

Emerald I sure hope you'll submit that chicken parmesan and your other recipies to the cook book.

I am in aw of some of the ideas in this post, please everyone, read the thread A MEDINA COOKBOOK and submit recipies pretty please.

If 20 or more submit 3 to 5 recipies each we can have a real nice 100 pg cook book. Maybe even bigger  :)

I really want that chic parm and Eleanors marinated lamb ribs recipies and many other for the book (ok ok and for myself I admit)

Nomi are you going to share maybe a mothers or grandmothers recipies? I hope you bros if you don't cook are picking sisters, mothers and grandmothers and aunties brains for recipies   ;D

the way i learnt to make round roti's was to make the Dough for them a bit stiffer than normal this way it is easier to roll, then when u r used to it start making a softer dough....what took me ages to learn was, getting the right amt of filling in a keema paratha.....

I'm glad you asked Twilight! :) Do you know how to make naan? I just love that bread, especially the cheese one. Oh and there's a type of bread (if it is considered a bread) that really thin and crunchy. I always get it with meals when I go out to Indian restaurants. I know for sure it has black seeds in it and possibly cumin seeds as well. If you know what it's called and how to make it, I'd love it if you gave me the recipe.

Siser Emerald that sounds like a popadom if that's what you mean they're made from rice.

Gosh I'm so impressed with all thr brothers who can cook. My husbands first forray into cooking after we'd had an argument, I got up to make his lunch in the morning to which he replied he'd already made his lunch thank-you very much. When I asked what he'd made he said a jam and cheese sandwich. Upon investigation it turned out that yes he had spread jam on one piece of bread placed a slice of cheese on top of this and put another piece of bread on top of that . Needless to say I couldn't let him eat that...  ::)
