I'm being serious here, I'm soooo fed up with the regular
[*]Tikka [*]Tandoori [*] Jalfrezi [*] Curry both tomato and yoghurt [*]Fried Chicken
Have I missed anything out?? If anyone has any interesting or not so interesting but easy recipes I would love to read from you. Even Br Nomi..see I'm desperate :P.
BTW could you please make sure there is gravy involved as his highness cannot possibly be asked to eat something dry.... the poor dear.

      I was just wondering if you would like this,it has little gravy.

    SPRING ONION CHICKEN FEAST


Ingredients
Chicken (boneless cubes) 800gms
Mustard oil 75ml/5tbsp
Onions (chopped)200gm/1cup
Tomatoes(finely chopped)100gm/1/2cup
Mustard seeds 10gm/2tsp
Chilli To taste
Salt To taste
Cumin powder 10gm/2tsp
Ginger-Garlic paste 45gm/3tbsp
Spring Onions 100gm/1cup

METHOD
Heat 2tbsp oil in a pan.Saute onionstill transparent.Add ginger-garlic paste and tomatoes and cook for 10-15 minutes.keep aside.
In a separate pan,heat the remaining oil.Add the mustard seeds and saute till they crackle.
Stir in the onion-tomato mixture;cook for 3-4minutes.Add chicken,salt,cuminand chilli powder.
Cook for another 20 minutes on low heat,till the chicken is done.
Mix in the spring onions and cook for 2 minutes.
Remove from heat and serve hot,accompanied by any Indian bread.

Try to stick to the the ingredients as much as possible.

i am not good w/ exact measurements but a couple of me favorites are:

Alfredo Chicken: just fry some onions, garlic, Chicken Rottisserie spice, some cut up green chillis, a tomato or two...salt to taste.
Then add the chicken and let it cook till the chicken is completely cooked. Then add some Alfredo sauce and let it simmer on low. its fingerlicking yummy:):)
you can serve it with rice or pasta...:) some salad (and if pasta maybe garlic bread).

Also what I tend to do, is use different varieties of base spices...Like culturally we tend to use the same cumins, curry powder, tumeric etc. So to create variations I would use western bases (like me current favorite is Chicken rotisserie spice) and mix it with masala (for the spicy edge)...or use oregano for pasta bases, or dill weed... The basics are the same (onions, garlic, tomato) just switch up the spices and the consistency of the gravy (whether thick or light) and normally it does the trick  ;)

Just boil chicken, add onions, tomatoes, a little tumeric, garlic, and cut up green peppers, and potatoes, and salt to taste. When its ready, add lemon juice (to give a tangy taste) and maybe some masala again for the spicy edge.
It's soo good man:) and light on the stomach..again can serve with rice:)

It's really good...we normally make lots during Ramadhan, and its the appetizer that gets you through taraweh even cuz its hearty and filling:)

ummm...also you can always make chicken without the stew, just shallow fry it with onions, garlic etc. and then as a side dish make spinach, potatoes, etc with the juice.
Or bake the chicken and make a side dish to go along:)

There's always fish too ;)

Alhamdulillah i'm so glad my mum is back  :)

I remember one afternoon sometime last September when my father came into the house with three freshly slaughtered and skinned chickens and asked if I could make something for the next afternoon as a couple of the neighbours were coming over to help him mend fences ([i]literally not metaphorically - yes I live on a farm [/i] ;) ). Anyways the mouse that I am I couldn't say no, and took the chickens to the kitchen and started panicking, cause I had never cooked a chicken before and for starters I wasn't sure how to go about cutting up the chickens  ;D Umm lets just say it was an adventure  :P But alhamdulillah managed to figure it out somehow.

Here's the recipe I used that night, and ended up making it quite a few times while my mother was away, because it was so simple and filling,

[i]Comforting roast chicken and veggie dinner

Ingredients:
2 small zucchini
1 large potato, preferably Yukon Gold
1 each red and green pepper
1/2 onion
8 skinless, bone-in chicken thighs
2 tbsp (30 mL) olive oil
2 tsp (10 mL) paprika
1/2 tsp (2 mL) each cinnamon, cayenne, salt and freshly ground black pepper


Directions:
1. Preheat oven to 425F (220C). Line a baking sheet with foil. Slice zucchini into rounds about 1 inch (2.5 cm) thick. Place in a very large bowl. Peel potato only if you wish. Slice into wedges about 1 inch (2.5 cm) thick. Core and seed peppers, then slice into thick strips. Cut onion into quarters. Add potato, peppers and onion to bowl.

2. Add chicken to bowl. Drizzle with oil and sprinkle with paprika, cinnamon, cayenne, salt and pepper. Toss until evenly coated. Tumble onto baking sheet. Spread chicken and veggies evenly in one layer. Roast, uncovered, in centre of 425F (220C) oven 30 minutes. Turn chicken and stir vegetables. Continue roasting until chicken feels springy when pressed and veggies are tender, 15 to 20 more minutes. [/i]

I usually got a pretty good gravy out of it, and instead of the just the thighs like the recipe calls for, I would use the whole chicken, (cut up), carrots were nice also, and instead of regular pepper i would use lemon pepper. Also a few spoons of yogurt didn't hurt it either :)

ps.Ever tried chicken corn soup?

            How come I don't see the Chicken Biryani on list  ???

Last year my bro. and bhabhee( sis.-in-law) went to Pakistan for a month, and I had the whole house alongwith the kitchen at my mercy, so I decided to COOK, and biryani came to mind. It took me ONLY, lemme emphasize please, *ONLY* 6 hours to cook it  :P but believe me, it was worth it, it turned out really good  :). 5 people had the honour of tasting it, including my younger brother, and they approved of it that it did taste something close to Biryani  :P. But whatever, I enjoyed it.

Sis. Fozia you should definetly try to make the shurba! As a Yemeni who eats it whenever I get the chance, I have to say it's da bomb! I usually eat it with lamb and I think it's made with barley. Or at least thats how my mom makes it......
Anyways I love Chicken Parmesean. Here's how I like to make it:
You take some chicken breast and dip it in egg and then bread crumbs mixed with flour. Fry it. Then boil some spaghetti and put it in a baking dish. Put a layer of spaghetti then some spaghetti sauce, then the chicken, and then some mozzerella cheese and stick it in the oven until the cheese melts. Take it out and serve!  :)

But thats the way I make it (I think it's easier), not the traditional Italian way.

It will take me two/three hours to cook depending on my little angel... she's going through a tear the wallpaper, tear the bank statement, tear the credit card bill's, phase... maaaan who taught her to crawl???

yeah, Doha another Shurba fan i see:) i love it! it's barley i guess, but soo much easier to use oatmeal (non flavored kind) and no one can tell the difference ;D anywho what's the difference again???

Fozia, can you give me the recipe for the desi stuff, the tikka, jalferizi, etc..i wouldn't mind trying them out Inshaallah:)

First of all bro, i hope you are not offended being called Nomi :P. Secondly, Allahu Akbar, i never tried butter chicken till yesterday!! You posted about it, i wondered what the thing is and since my "phast" friend is in the phase of getting silenced (married) so i went to his Nikah yesterday and voila.... Chinese rice with butter chicken..

But "Chicken Manchurian" can beat butter chicken any day :)

Go for the curries. Some dishes you have not mentioned:

chicken Qorma (shan masala)
chicken Kabab (similar to beef shami kabab)
chicken with chickpeas (murgh cholay, shan masala)
chicken karhai (shan masala, can't get better than this imho)
sweet & sour chicken (very easy to make)
chicken palak (palak gosht, tastes incredibly good if cooked right)
achar chicken (shan masala)

Homegrown recipe:
Take chicken (boneless preferred), marinate (liberally) in yogurt, salt, red pepper, crushed cumin, crushed corriander seeds, ginger/garlic paste for an hour or so. Cook in low heat (no extra water) and you end up with something that goes well with hotdog buns etc.

Its good to experiment with the ingredients and recipes.

Wow I am soo impressed with all the Br.s who can cook. I mean I know chefs generally tend to be male, however finding a desi guy who can cook is, well, astonishing... :P

OK apologies to Sr. Nur-Al-Layl for taking so long to get back to you re;desi recipes. I've been busy forgetting to pack for our trip, we had a bereavement in the family, my kitchen was transformed into a building site, I've had work deadlines etc etc.

Chicken Jalfrezi (gotta say I cheat so don't get upset if not all is done from scratch)

[*]boneless chicken preferably breast pieces cut into cubes [*]1tsp garam masala (dunno what you call it in english, tell me if you need the recipe for it though) [*] 1 tsp dhunia (crushed corainder seeds) [*]Crushed fresh green chillies 5/6 (adjust according to preference and the number of people your cooking for) [*]Crushed fresh garlic 2/3 bits from a bulb [*]crushed ginger (ginger should be half the amount of the garlic) [*] Tsp red chillie powder [*]1/2 tsp turmeric [*]2 tbsp jalfrezi paste [*] 5 tbsp fresh yoghurt (live organic greek style is the best but it's totally up to you)  adjust amount of yoghurt depending on how thick you want the curry to be. [*]Salt (adjust to taste) [*]Medium onion chopped [*] Cooking oil 3/4 tbsp [*]1 green pepper de-seeded and sliced length ways [*] 1 large potatoe cut into cubes

Heat oil and saute chopped onions untill pink, turn down heat and add chillies (fresh and powder) garam masala, dhunia, garlic, ginger, turmeric, mix everthing then stir in chicken pieces, cover and allow to cook on a low to medium heat. Once the colour of the chicken changes from pink to white, add the salt. Mix Jalfrezi paste with the yoghurt and stir that into the chicken, add water cover and cook on medium heat till half done, add the potatoes if using (we're all potatoe freaks in my ummi's house), cover and cook till potatoes are nearly done, then add the green pepper pieces, cover and cook till everything is done. I prefer the pepper to be firm so I only add it in at the last 3 minutes so it doesn't turn to mush but some people prefer it mushy so add the peppers according to how firm you want them to be.
Garnish with chopped fresh coriander and serve with naan bread or roti.
(does anyone want me to bother with the rest of my list now you've read that lot... :P)

Also try cornflake chicken, it's awesome comfort food.  Take chicken breasts, dip them in melted butter and roll them in cornflake crumbs.  You can buy the flakes already crumbed or get a box yourself, put them in a sealed plastic  bag and beat the heck out of them.  Put bay leaves and nature's seasoning on top, and cook at 375 for about 45-hour.  Corn and salad and mashed potatoes go well.

here is a really easy one:


 take a whole cut up chicken still on the bone..and put in a baking pan. cover tightly with foil and bake at around 375 for about 25 minutes.  Take 2 cans of cream of celery (cream of mushroom works too) and just pour on  the chicken and spread a little. Cover tightly again and bake for about 30-35 minutes more.   Serve over steamed white rice (not basmati... Japanese rice is the best but regular medium grained rice is good too). Sprinkle with salt and pepper.... Yummmmmmy!!

 its good with a bit of sour cream mixed in the soup but I now only eat halal and can't find a halal sour cream.

I'm quite fond of my Mom's Jamaican style "jerk chicken" ... too bad I don't know the recipe.  But I have learned that you can always make fried rice out of leftover chicken (or any meat for that matter).
    - just saute some onions, garlic, and tomatoes
    - you can use those mixed frozen veggies from the grocery store (defrost it in the microwave for a few minutes, then add it to the pot)
    - throw in the leftover chicken and some seasoning (we usually use curry, but you can do anything)
    - stir it around, and, when everything looks good, add in the cooked rice
it's quick and easy and lasts for a while...and it's a way to eat leftovers without feeling like your eating leftovers!
