It was by Elnour You need: lamb (about a kilo, chopped into pieces, it doesn't matter what type of lamb but we usually use the leg or the shoulder chopped into smallish pieces) 1 tomato some fresh ginger about 6/7 cloves of garlic 4 medium sized onions 2 tsp of chilli powder 2 tbsp of salt 2 tbsp of cumin 2 tbsp of whole coriander about 6 cloves about 8-10 whole black pepper 2 black cardamon 2/3 little bits of cinnamon or 1 tbsp of cinnamon powder about half a cup of oil 1) chop the onions fairly small, and chop the ginger finely. Chop up the tomato too. 2) put everything into a largish pot, all together, add water (about three cups) and bring to the boil. 3) keep gently boiling, stirring occasionally 4) when the water is practically gone, and the tomato and onions are practically unrecognisable, add the oil and fry, stirring continously. 5) turn down the heat a little so that it's still frying gently and put the lid on. Every now and again take the lid off and stir the mixture so that it doesn't stick to the bottom of the pan. 6) if you wanted to add potatoes or peas or anything else to this, then do so after you have added the oil. 7) it's finished when you look in and see that the oil has seperated itself from the mixture. Or when the potatoes are done. 8) we eat this with roti/chapati, which is the pakistani bread. You can eat it with rice either, or with any type of unleavened bread, and salad on the side. 9) Alternatively when you see the oil is seperate, you can add a couple of cups of water to it, so you have a more soupy dish. After adding the water, you can add in some fresh coriander or mint (tastes *good*!!) 10) Enjoy! *forgot to mention, the whole process takes the best part of an hour! |
