[slm] Here u go sis Barr, as per your request. Tell me how it went ;) Puteri Salat For the bottom 600gm glutinous rice 1 cup of diluted coconut milk salt to taste For the top 6 eggs 3 cups of thick coconut cream/milk 1 cup sugar 1 cup flour pandan paste or u can be creative and add anything like corn in cream yada yada Method Wash and soak the glutinous rice for abt 2 hours. Then mix the rice with coconut milk making sure the coconut milk is of the same level as the rice. Put in salt to taste and stir the mixture till even. Pour in a baking/cooking container and steam under low heat till the rice is adequately cooked. Then take out the container and make sure u press the cooked rice with enough pressure to make the texture dense and compact (as in tekan sampai mampat). Steam again for another 10 mins. In the meantime mix all the ingredients for the top and then cook under low heat till u see some steam rising, mixing the ingredients slowly all the time. Then remove the pot and sieve the mixture to ensure no lumps. Take out the cooked rice and pour the mixture on it. Put the container back in the steamer and steam for about 45mins. Cool the kueh and then serve cool. |
