What kind of BBQ are you looking for? In my neck of the woods we keep it simple, hamburgs hot dogs and spiedies ( marinated chix breast pieces~I have a great receipi for this, developed it on my own thru the years.).And of course halal toasted marshmellows.

We surely don't use any of those 'foreign spices' you are accustomed to! this last sentance is directly spoken to a bro who alwys makes fun of my "spiceless" life.

For a faux Chicken BBQ.... Use KC Masterpiece BBQ sauce. it is the red sauce with a hint of swwet. Cover the chix and bake as usual in the oven.

The other day I read Dinasour sauce is the best seller in US. We tried it... I don't know what makes it so special!

The other day I marinated lam chops and grilled them... super high...so you get a bit of crust. I hate lamb, but this was delicious!

The recipie I have been searching for is the one for chix halves that they sell at the churches and fire stations!

I used Tony Roma's BBQ sauce for chicken breast and that came out well.  For fish, specifically salmon i used some lawry's lemon pepper marinade.  And for burgers, just some salt and pepper.  I tried one variation of burgers with bleu cheese, that was interesting.   :D

Basically that's what I work with, chicken breasts, fish, and burgers.  I'd like to try shrimp but have no idea what i should use.

they key to making a good burger is to have it ground right before you cook it.  I wil lpick out a chuck steak or a sirloin peice and have them grind it the afternoon you are cooking it.  Then add a little worscheshire sauce to the mix and add some to each side as you are cooking it.  You need approx. 1/3 pound of beef to make it thick enough to be real juicy.   Also,  If you have the money  (about the price of a med price bbq get a ceramic smoker.  The Imperial Kamado is an incredible cooking instrument and will make you a star of any bbq.  It is a thick walled item that keeps all the juices in

[wlm] warahmatullah...

If you like smt oriental, you might wanna try this. But pardon the absence/ inaccuracy of quantities in this recipe (particularly the sauces). I don't usually use a measuring spoon :)

Ingredients

5 pieces of drumsticks - make slashes on them for better absorption (skin tastes great in this recipe, so chicken wings are prolly the best. But for health reasons you may skin them ).

1/2 medium red pepper
1/2 medium onion
3-5 cloves of garlic
3cm ginger

3.5 tbsp Oyster Sauce
2.5 tbsp Black Pepper Sauce
1.5 tsp Sweet Soya Sauce (I usually use Malay/ Indonesia's soya sauce, but U can try the Chinese ones)
1.5 tbsp Honey
Honey for glazing

================

Start with basmallah  :)

Blend red pepper, onion, garlic and ginger with a tiny amt of water (maybe, 1tbsp)

Mix the blended ingredients with the sauces and honey. Marinate chicken with it overnight or till 24 hours or more.

Then, place in a pot. Cover and cook in medium-low heat till 75%-90% done. Stir once in a while to prevent chicken sticking in the pot. Sauce would thicken. Set chicken aside/ refrigerate till you are ready to grill them.

When grilling time has come, glaze them with the thickened sauce and additional honey. Put them under a grill (or on the pit).

Chicken will be moist and tender, yet crispy with bits of burnt bbq flavour!

All the best!  :-X

(I need to work on the accuracy of the quantities - I'll pay more attention, when I do them again, inshaAllah)

also,  You can get the frozen chicken breast at costco (not sure if muslims are allowed to eat what type of meats, so if this is wrong just ignore it),  put them on the bbq frkzen and you can brush with any type of marinade.  Italian dressing gives a rea lgood flavour, but watch out for the flare ups.  Whn you put them on frozen they come out way more moist.

Wow Barr, that is some recipe.  I'm not sure what kind of flavor black pepper sauce has or oyster sauce, I'll have to look into those.  It definitely sounds like a good recipe.

JO: chicken tikkah is an advanced recipe, I"m still learning. :)  You mean like the the chicken tikkah at BBQ tonight in Karachi?

Mike: i heard about using salad dressing last night on the food channel, I might just try that.  Also the ground meat makes a difference for burgers.  I used sirloin ground beef before and phat came out nice, but then I tried Angus beef with grass fed cows and that came out much more juicier.
