Electric skillet leg of lamb

two pounds lamb (I used a boneless leg piece)
two cans crushed tomatoes (I used fire roasted)
one package fresh rosemary
olive oil
garlic
salt
pepper

Heat electric skillet to 400
slice lamb into inch thick slices, (make sure to get rid of that big glob of fat inside, unless you like really gamey lamb) salt and pepper both sides and sear in hot skillet on both sides in olive oil
Reduce heat to low. add tomatoes, garlic, and rosemary. Add water to just cover lamb. Cover and simmer for as long as you want and hour or two until tender.

I served mine with mashed potatoes and sauteed asparagus with pastacios, and the tomatoes made a good gravey for the potatoes.
