I am so happy. I love spring and fall.
I'm a cold weather girl at heart. It's been breezy and sunny with a
few clouds today and cooooooool   :)
I'm thinking of all the fall and winter meals alreay.
Casseroles, soups and sandwiches.
What is your favorite soup?
What's your favorite sandwich and what is your favorite casserole dish?

If you want include recipes  :-*

My favorite sandwich is a Bacon (turkey bacon of course) lettuce and tomatoe sand

Favorite soup: To many to name: Homemade Veggie Beef and
also Tomatoe soup

Favorite casseroles: I have a chicken and stuffing one I make that is my fav.

So what's yours?

Water and fig newtons are my life savers when I bike more than 30 miles. I rarely eat meat, (though it's about to change cause ramadan is round the corner). Not that I dislike it, it just makes me ride my bike sluggishly...

Time for me to buy some rain gear. I love riding in the rain... :)

I like clam chowder, but that can be too fattening, so I go with chicken noodle soup.  And roast beef isn't bad, but I'm trying to cut back on beef consumption, so I'll go with turkey.

I am not quite ready to face the fact that fall is here because that means winter is just around the corner, and that means....snow! I am still on crutches from an accident, and I am hoping to get rid of them before the snow flies. The fact it was 85 yesterday helps me in my denial that fall is here.   ;)

As for my favorites, it's a toss-up between cheddar broccoli soup and a turkey and swiss on croissant, or a grilled cheese with chili. Either pair hits the spot on cold Midwest evenings.

Hareera
M.F.

Assalamu alaikum wa rahmatullah,
I think it's my duty towards all my brothers and sisters to give them a recipe for Hareera, a soup to which no other compares.  Not even clam chowder (btw I've made fish chowder with low fat milk thickened with corn starch or just blended potatoes).
Hareera is THE soup in Ramadan here in Morocco.  I suppose it could be classified under tomato soup, but it's very nutritional
Here's how it goesm don't be put off by the long list of ingredients, it's quite easy and really really tasty.

1 pound cubed meat (optional)
1 teaspoon ground turmeric
1 1/2 teaspoons ground black pepper
1 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/4 teaspoon ground cayenne pepper
2 tablespoons margarine
3/4 cup chopped celery
2 med onions, chopped or better yet, grated
1/2 cup chopped fresh cilantro
1 (29 ounce) can tomatoes (or fresh tomatoes), grated or blended or whatever it is you do it make them liquid.
7 cups water
3/4 cup green lentils
a handfull of vermicelli pasta

You simmer it all for about 2 hours.  I guess you add the canned chickpeas toward the end, and the vermicelli at the very end.

Then if you want, you thicken it with a mixture of flour and water but you have to make sure it doesn't lump up.
Some people put those stringy eggs in chinese style.

If you want, serve it with lemon slices, some people like to put a little lemon juice in theirs.

my mom makes my favorite soup...

we call it ' Guyana soup'
contains , water, barley, various other seasonings that I dont know of, casava, plantains, can have chicken bones/meat, beef, dumplings, carrots, potatos if you want, top off with a whollop of butter....and dig in. Hearty and tasty.

Sandwich would have to be a simple turkey sandwich- or crossaint with tomato and swiss cheese tasted. But that's not really a sandwich. Or just a garden tuna salad sandwich. I Guess I dont have a favorite. Alls good.

Isn't there some desi soup called "harissa", or am I just imagining things? ???

I see where the confusion is stemming from!

Okay so we drink this hot drink called hareera...but it has no meat in it.  And it's sweet.  It's made from milk and a whole bunch of different types of nuts.  It's really, really good.

The soup sounds really, really good too.  Man, soup is so good.

Harissa is an Arab soup type thing, which is made during Ramadan. Man I have no idea how to make this, and I've told my husbands nephew so, he's from Dubai and used to having Harissa for Iftar. Maybe they serve it at central Mosque, will send him off to break fast there oneday during Ramadan inshallah.

Also Nihari is a great favourite too, please note these are all favourites of my husband and nephew, dont drink the stuff myself, just cook it.

So what's in clam chowder come on someone has to no??

Isn't nihari like really unhealthy, like it's made with all this ghee and fat?

Clams
:P

onions, celery, potatoes, milk, butter, salt pepper, hmmm not sure what else probably some more herbs.  there's 2 kinds of clam chowder, most people are familiar with the new england clam chowder and then there is manhattan clam chowder (it's red).  also watch out for some clam chowders, a lot of places make it with bacon.

"Isn't nihari like really unhealthy, like it's made with all this ghee and fat? "

Br. Bhaloo(Isnt there a movie by this  name :) ) I think you are confusing Nihari wih paya. Paya is all fat etc. Nihari is boneless beef (in a way you can say it is unhealthy :) .)

Nihari contains meat (beef but we tend to use lamb), onions, oil for sauteing the onions in (I tend to use very little but we do use either Olive oil or sunflower oil), and wheat flour. Obviously salt and the regular spices too.

So looks like I will not be tasting clam chowder any time soon, don't think I've seen it on this side of the pond.... :(

hareera

I remember mother making it, and we enjoyed it, but I never thought of it as a soup. Aren't soups saltish by definition?

hareesa

that too was lovely, although to be honest I have forgotten what it looks or tastes like.

nihari
nihari isn't nihari unless it is made from beef. Sure it is unhealthy, but so is chocolate, and I have never seen anyone here compalining abou chocolate. What one does with unhealthy foods klike this is to have them not too often, sparingly, eat these in moderation and to do some extra exercises afterwards.

And to have it with brains and "nalee", I haven't had that in years. :(

I never thougth of nihari as a soup. More like a salan, to be had with naan.

Anyone knows how to make lots of shorba?
